Erbaluce di Caluso or Caluso DOCG “Aὐτόχϑ∞ν”

From this year 2013 I beginning to produce, Wine Erbaluce di Caluso using the fermentation the yeast Native (Indigenous, Autocton) own the same grape Erbaluce. The process of collection, cold maceration, pressing, clarification and refinement are the same as those used for the production of Calumet dell'Erbaluce that uses selected yeast.
